This heavy-duty round-handled jaccard is purpose-built for piercing pork skin to achieve perfect crackle, while also being highly effective on any cut of meat for flavour penetration and tenderising. The sharp needle array creates tiny channels through pork rind, allowing salt and heat to work deep into the skin for crisp, blistered crackling, and through muscle fibres to help marinades, brines, and rubs penetrate beyond the surface.
